You're ambitious trying to run the game under Wine on Mac OSX, though at least one other person managed to get it running, at least briefly before crashing. (You may remember that thread... )
Have you managed to install .Net 3.5 and XNA 3.1 under Wine? I only ask because those error messages look to me like the required XNA libs are not available. From a brief search it seems that Winetricks is useful to get those packages installed.
